ocated in the heart of Rue Mercière, our restaurant is one of those Lyon landmarks where people come not only to eat, but to share a good time. In our dining rooms, crossed by a typical traboule, you’ll find the warm atmosphere of a true bouchon: lively tables, generous dishes, and a genuinely welcoming spirit.
Since 1978, Jean-Louis Manoa has been at the helm of Le Mercière, turning it into one of the most iconic addresses on Rue Mercière. After more than four decades, the story continues with his son-in-law, César Ponsonnet, who took over the restaurant in 2024. Having worked in New York as head waiter in a three-Michelin-star restaurant, he brings a fresh perspective and renewed energy while preserving the soul of the place.

A passionate chef, Sébastien Plessis carries on the reputation of Le Mercière through authentic and refined French cuisine. After honing his craft in prestigious establishments such as La Tour d’Argent in Paris, the Carlton in Cannes, and several of Lyon’s most renowned restaurants, he has returned to the very essence of his passion, the great classics of French gastronomy.

Driven by a deep respect for both ingredients and tradition, Chef Sébastien Plessis brings to life legendary dishes like lièvre à la royale and pâté en croûte, along with seasonal creations he reimagines with precision and grace. Under his direction, Le Mercière’s cuisine pays tribute to French culinary heritage, honest, generous, and masterfully executed.

Inspired by the great Lyonnais classics, quenelles, andouillette, tablier de sapeur, as well as regional favorites, every plate reflects a love for authentic flavors and the joy of sharing.

The wine list celebrates passionate winemakers, rooted in the very terroirs that inspire us, and whose bottles tell stories we’re proud to pass along to our guests.
