In the kitchen, Chef Sébastien Plessis stands for an honest and generous cuisine. His commitment is clear: to work every day with local produce and offer dishes that are both traditional and full of flavor.
At Le Mercière, Lyon’s culinary tradition meets the creativity of refined, thoughtful cooking. On the menu, you’ll find the classics of a true bouchon, brioche sausage, tripe “tablier de sapeur”, escargots, and veal blanquette “grand-mère” style, alongside more sophisticated creations such as seared octopus, Le Mercière’s foie gras, or Charolais beef tenderloin with morel cream sauce.
Each dish is designed to tell a story : that of a rich terroir, a passed-down savoir-faire, and an honest cuisine that embodies the pride of Lyon.
"In the neighbourhood of Les Cordeliers, this "bouchon" founded by Jean-Louis Manoa is a master class in traditional Lyonnais cuisine: saucisson chaud lyonnais (sausage), œuf meurette (eggs in a red wine sauce), quenelle de brochet (pike quenelle) or "string-drawn" andouillette from renowned producer Bobosse. Everything is made in-house, in a spirit of generosity and in time-honoured tradition, whetting the appetites of diners – locals and tourists alike – who are seated cheek by jowl in an inviting atmosphere. Behind the alluring red façade is a double dining room separated by a covered pedestrian passageway – reminiscent of those you find in Paris."

Déjà deux fois chez le mercière dans une des rues les plus touristiques de Lyon. Jamais déçu service et plats à la hauteur. Prévoir de réserver pour être bien placé.

Nous sommes revenus dans un restaurant que nous apprécions par sa cuisine, son service et sa personnalité. Le service était rapide, c'est le seul bémol pour notre soirée.

Très belle découverte pour ce bouchon Lyonnais. On en a pas fait bcp, mais celui ci arrive au 1er rang.
Excellente cuisine, service nickel, et ambiance typique des bouchons. Pas pour rien que ce resto a eu a plusieurs reprise le label Gault & Millau !!
